Ingredients:
50g/1 3/4 oz plain flour
50g/1 3/4 oz corn flour
pinch of salt
1tsp baking powder
1 egg
150ml/5 fl oz iced water
5 apples, cored and sliced
olive orsunflower oil, for deep-frying
caster sugar, for dusting
ice cream to serve
Method:
Sift the flour, corn flour, salt and baking powder together into a large bowl.
Stir in the egg and water and mix to a fairly smooth batter.
Heat the oil in a deep-fat fryer to 180-190 deg.C/350-375 deg.F, or until a cube of
bread browns in 30 secounds. Dip the apple slices into the batter, add to
the hot oil and cook until crisp and golden. Remove with a slotted spoon and drain on kitchen paper.
Dust the apple fritters with catser sugar and serve immediately with ice cream.
